Strawberry Gelatin Salad

An updated twist on an old classic. Granola topped with a cream cheese layer and strawberry gelatin.

Ingredients

  • 2 cups Cascadian Farm™ organic French vanilla almond granola, crushed
  • 4 tablespoons butter, melted
  • 2 packages (8 oz) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 container (8 oz) frozen whipped topping, thawed
  • 1 package (6 oz) strawberry flavored gelatin
  • 1 package (16 oz) of frozen sliced strawberries
  • 2 cups boiling water

    Crush granola in either a food processor or in a Ziploc bag with a rolling pin. It doesn't need to be too fine. Depending on your texture preference you can even leave it uncrushed.

    Add melted butter to granola in a small bowl and mix to combine. Pour 1/4 cup of the granola into the bottom of each of the plastic tumblers. Let mixture cool in the fridge while preparing the filling.

    In a medium bowl, beat the cream cheese, sugar, and vanilla until smooth and blended. Fold in the whipped topping gently until combined. Place filling in a Ziploc bag and cut off the corner of the bag. Pipe a generous layer on top of the granola, dividing the filling evenly between the cups. Place in the refrigerator to chill while preparing the gelatin.

    Add the boiling water and gelatin to a medium bowl and mix well. Add the frozen strawberries and stir well. Let mixture set up partially in the fridge for 5-10 minutes. You want to make sure it's firm enough to not leak through your cream cheese layer but not completely set up yet. Divide gelatin equally betweeen your cups.

    Let desserts chill in the fridge until gelatin is completly set and you are ready to serve.

  • Strawberry Gelatin Salad is a classic dessert that’s always the first thing to go at our family barbecues and get togethers. I thought the whole concept was a little strange the first time I heard about this dessert, but over the years it’s definitely become one of our family favorites. Before you get grossed out, there’s really nothing salad-ish about this dessert. Although we do get crazy ideas over at Tablespoon, we haven’t gone completely bonkers by mixing lettuce and gelatin here. Phew! To update the classic version, we made our Strawberry Gelatin Salad into individual portions by layering them in little plastic tumblers. That way if you're making these for a backyard barbecue, clean up is a cinch! It all starts with a layer of buttery granola, followed by a sweetened cream cheese layer, and topped with strawberry gelatin with sliced strawberries inside. Sounds strange but once you tasted this salty and sweet combo, you’ll understand why it's so dang good.
  • You can easily make this dessert lighter by using sugar-free gelatin and substituting light cream cheese and light whipped topping. I’ve tried it both ways and can hardly tell the difference between the two!
