Endive Boats with Herbed Goat Cheese and Lox

Ingredients

  • 8 endive leaves, (from one head)
  • 3 ounce lox (smoked salmon) - should render 8 slices
  • 3 ounce softened goat cheese
  • 1/2 cup finely chopped herbs. I used basil, thyme and oregano
  • 1 tablespoon fresh lemon juice (optional)

Steps

    Give the herbs a good chop. As finely as you can.

    Pinch off a small amount of the goat cheese and roll it into a little ball with your hands.
  • 3
    Then roll the ball through the herbs, coating evenly. Continue until you get 8 balls.

    Layer each lox slice inside each endive boat.
  • 5
    Place an herbed goat cheese ball at the tip.
  • 6
    If you want, squeeze with fresh lemon juice. You can skip this part though.

    Serve immediately!
