Fantastic fruited fish – perfect for a dinner that’s ready in just 15 minutes.

Ingredients

pound halibut or other mild-flavored fish steaks
1/2
cup apricot preserves
2
tablespoons white vinegar
1 1/2
teaspoons chopped fresh or 1/2 teaspoon dried tarragon leaves

Directions

  • 1 Set oven control to broil. Spray broiler pan rack with cooking spray. Place fish on rack in broiler pan. Broil with tops about 4 inches from eat 4 minutes; turn. Broil about 4 minutes longer or until fish flakes easily with fork. Meanwhile, mix preserves, vinegar and tarragon ; spoon onto fish. Broil 1 minute longer.
Tips  

Salad: Cut cooked fish into pieces. Serve over spinach or other greens, and drizzle with raspberry vinaigrette. Sandwich: Cut cooked fish into pieces. Place fish on tortilla, add a spoonful of fruit salsa, apricot or peach preserves and roll up. Main Course: Cut cooked fish into pieces. Add to cooked rice and sauce mix, and serve with steamed snow peas.
