Enjoy these wonderful cookies topped with cherry and nuts - perfect for any festival.

Ingredients

2/3
cup sugar
3/4
cup margarine or butter, softened
2
teaspoons vanilla
1/2
teaspoon almond extract
1
egg
2
cups all purpose or unbleached flour
1/2
teaspoon baking powder
1/3
cup chopped candied red cherries
1/4
cup chopped pecans
1/4
cup cherry preserves or strawberry jelly
Powdered sugar

Directions

  • 1 Heat oven to 350°F. In large bowl, combine sugar and margarine; beat until light and fluffy. Add vanilla, almond extract and egg; blend well. Lightly spoon flour into measuring cup; level off. Add flour and baking powder; mix well.
  • 2 Divide dough into 4 pieces. On lightly floured surface, shape each piece into 12x3/4-inch roll; place on ungreased cookie sheets. Using handle of wooden spoon or finger, make indentation about 1/2 inch wide and 1/4 inch deep lengthwise down center of each roll.
  • 3 In small bowl, combine candied cherries, pecans and preserves; mix well. Fill each dough indentation with 2 tablespoons of the cherry mixture.
  • 4 Bake at 350°F. for 15 to 20 minutes or until light golden brown. Cool 10 minutes. Cut each roll diagonally into 12 pieces. Sprinkle lightly with powdered sugar. Remove from cookie sheets.
