This marinated cheese made with fresh herbs has a taste of Greece. Enjoy with crackers or as a quick pasta topper.

Ingredients

oz feta cheese, cut into 1/2-inch cubes
2
cloves garlic, finely chopped
1/4
cup sun-dried tomatoes packed in oil, drained, chopped
2
tablespoons chopped fresh basil leaves
2
tablespoons chopped fresh parsley leaves
1/4
teaspoon salt
1/8
teaspoon black pepper
1/3
cup olive oil
Food Should Taste Good™ tomato & basil brown rice crackers, as desired

Directions

  • 1 Place feta cubes in small shallow dish. In small bowl, mix garlic, tomatoes, basil, parsley, salt and pepper. Stir in olive oil. Pour oil mixture over cheese. Marinate 2 hours in refrigerator, stirring occasionally.
  • 2 Transfer mixture to shallow serving bowl; serve with crackers.
Tips  

Slicing the feta cheese while it is cold makes for a much easier task!

This recipe can be made ahead, then covered and refrigerated overnight. Remove from refrigerator about 1 hour before serving.
