Ingredients

(9-oz.) pkg. refrigerated fettuccine
1 1/2
teaspoons oil

tablespoons finely chopped onion

garlic cloves, minced
1
(15-oz.) can cream-style corn
1
(4.5-oz.) can chopped green chiles, undrained
2/3
cup skim milk
3
to 4 drops hot pepper sauce
2
firm ripe Italian plum tomatoes, finely chopped
1/3
cup sliced green onions
1/4
cup sliced ripe olives

Directions

  • 1 Cook fettuccine to desired doneness as directed on package.
  • 2 Meanwhile, in large nonstick skillet, heat oil over medium heat until hot. Add chopped onion and garlic; cook and stir 2 minutes. Set aside.
  • 3 In blender container or food processor bowl with metal blade, combine corn, chiles, milk and hot pepper sauce; blend or process until smooth.
  • 4 Pour corn mixture over onion and garlic into skillet; heat over medium heat until hot. Drain fettuccine. Add fettuccine, tomatoes, green onions and olives to corn mixture; toss to coat. Cook until thoroughly heated.
