Fire-Roasted Tomato Turkey Meatballs

Quick and easy turkey meatballs cooked in fire-roasted tomato goodness!


It’s-a meat-a-ball-a time!

And not just any meatballs, but these quick and easy fire-roasted tomato turkey meatballs!

You can make them as cute little appetizers. Or serve them up over your favorite pasta noodles. Or if you want to go extra healthy, try serving them up over some quinoa or couscous.

However you serve them, these little guys are packed with flavor, and are a BREEZE to make. Here’s how!

My favorite thing about meatballs -- pretty much dump all of the ingredients together in a bowl. Then stir or use your fingers to combine until will mixed.

Ingredients for turkey meatballs.

Scoop out whatever size you would like (I used a small cookie scoop).

Scoop turkey meatballs with a scooper.

Then shape them into little meatballs.

Roll turkey meatballs with your hands.

Meanwhile, heat 2 cans of Progresso’s Recipe Starters Fire-Roasted Tomato Sauce in a large, deep skillet or stockpot. (You can also throw some chopped basil in there if you’d like.)

Once the sauce comes to a simmer, pop the meatballs in there in an even layer. Cover, and let cook for about 30 minutes, turning the meatballs occasionally.

Simmer Progresso Fire-Roasted Tomato Recipe Starter and add meatballs.

Then pull them out and garnish wish some extra fresh basil. And dunk them in some extra sauce.

Fire-Roasted Tomato Turkey Meatballs

Ingredients

pound ground turkey
1/2
small white onion, finely diced
1/3
cup Italian breadcrumbs
1/4
cup grated Parmesan
1/2
teaspoon smoked paprika
1
egg
1
pinch salt and pepper
2
cans Progresso Recipe Starters Fire-Roasted Tomato Sauce
1
teaspoon smoked paprika
1/4
cup torn fresh basil (optional)

Directions

  • 1 Combine ground turkey, diced onion, breadcrumbs, Parmesan, paprika, egg, salt and pepper in a large bowl. Use a spoon (or your fingers) to stir and mix until well-combined.
  • 2 Shape the mixture into small meatballs, about 1-inch in diameter. (The recipe should make 28-32 meatballs.)
  • 3 Meanwhile, heat the tomato sauce in a large, deep skillet (or stockpot) over medium-high heat until simmering. Stir in the smoked paprika and basil, and reduce heat to medium-low. Add the meatballs in a single layer, coating with the sauce. Cover and let simmer for about 30 minutes, turning the meatballs once or twice.
  • 4 Serve meatballs with the remaining sauce and garnish with extra fresh basil if desired.
