Our vegetarian spinach-cheese lasagna rolls can be made ahead and frozen until you're ready to bake. Roll up lasagna noodles with a mixture of thawed spinach and three cheeses, and then top with marinara sauce.
Since the lasagna rolls are frozen individually, you can easily remove the desired amount from the freezer bags at a time. If you’re serving a bigger group, thaw as many rolls as needed and use more than one 8-inch baking dish or a larger dish. Increase the amounts of marinara sauce and mozzarella cheese accordingly.
You can substitute your favorite tomato pasta sauce for the marinara sauce, and replace the mozzarella cheese with another shredded cheese such as Monterey Jack. Feel free to use more or less sauce and cheese to suit your personal preference.
To complete the meal, serve the lasagna rolls with garlic bread and a tossed green salad.
