Ingredients

  • Streusel Topping
  • 2/3  cup quick-cooking or old-fashioned oats
  • 1/3  cup packed brown sugar
  • 1  cup pecans, coarsely chopped
  • 3  tablespoons canola or vegetable oil
  • Cake
  • 1  cup granulated sugar
  • 1  container (6 oz) Yoplait® Greek Fat Free honey vanilla yogurt
  • 2/3  cup canola oil
  • 1  teaspoon vanilla
  • 2  eggs
  • 1 1/2  cups all-purpose flour
  • 1 1/2  cups whole wheat flour
  • 3  teaspoons baking powder
  • 1/2  teaspoon ground cinnamon
  • 1/2  teaspoon salt
  • 2  cups finely chopped, peeled apples (2 medium)

Directions

  1. 1Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In small bowl, mix streusel ingredients with fork until crumbly; set aside.
  2. 2In large bowl, beat sugar, yogurt, oil, vanilla and eggs with electric mixer on low speed about 30 seconds or until blended. Add all remaining ingredients except apples; beat on low speed about 1 minute or until blended. Stir in apples. Spread batter in pan. Sprinkle evenly with topping.
  3. 3Bake 40 to 45 minutes or until toothpick inserted in center comes out clean. Serve with ice cream or whipped cream, if desired.
