Ingredients

ounces uncooked fettuccine

cups sliced mushrooms (1/2 pound)

cup chopped fresh parsley

cup freshly grated Parmesan cheese

cup red wine vinegar

cup olive or vegetable oil

teaspoons chopped fresh rosemary leaves

teaspoon freshly ground pepper

clove garlic, finely chopped

Directions

  • 1 Cook and drain fettuccine as directed on package; return to pan.
  • 2 Add remaining ingredients; toss until fettuccine is coated with oil.
Tips  

The chewy, meatlike texture of mushrooms makes them an excellent meat replacement. Some mushrooms, such as portobello, shiitake, oyster and porcini, have a meatier texture than regular white mushrooms.
