Ingredients

cups chopped fresh or frozen (thawed) peaches
1/4
cup finely chopped red bell pepper

to 4 tablespoons grapefruit juice

teaspoons chopped fresh cilantro
2
medium green onions, chopped (2 tablespoons)
Dash of salt

Directions

  • 1 Mix all ingredients in glass or plastic bowl.
  • 2 Cover and refrigerate at least 1 hour to blend flavors.
Tips  

Select peaches that are firm or only slightly soft when pressed. The skin should be creamy or yellow. Avoid bruised, very hard or green peaches.

Salsa is the Mexican word for sauce, which can be either cooked or fresh. Salsa cruda means uncooked salsa, and salsa verde is green salsa, which is usually made from tomatillos, green chilies and cilantro.
