Fried Beansprouts

Sprouted my own beans for it. An Asian dish. Half the family said "Yum!" Half said "Yuck!" You'll just have to decide for yourself.

    Ingredients

    • 250g (8oz) beansprouts
    • 2 tbsp. vegetable oil
    • 1 clove garlic, lightly crushed
    • 4 slices fresh ginger
    • 1 tsp. light soy sauce
    • 1/4 tsp. salt
    • 2 spring onions, cut into thin slivers

    Directions

    1. 1Wash the beansprouts, drain thoroughly and pinch off any brown straggly tails.
    2. 2Heat the oil in a frying pan, and fry the garlic until golden, then discard, retaining the flavored oil.
    3. 3Fry the beansprouts and ginger in the garlic-flavored oil over a high heat, tossing constantly, for 1 minute.
    4. 4Add the soy sauce, salt, and spring onions and continue to stirfry for another minute. The beansprouts should be slightly crisp.

    Well, fact is that sprouting your own is much less costly than buying it from the store--and a whole lot better for you, too. I used Mung beans. ~Rose
