Ingredients

  • 2 c light brown sugar
  • 1 c shortening (solid Crisco)
  • 2  eggs, beaten
  • 1 tsp vanilla extract
  • 1 1/2 c all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 c quick-cooking oats
  • 1 c powdered confectioner's sugar

Directions

  1. In a large mixing bowl, cream together shortening and brown sugar. Add beaten eggs and vanilla extract and mix well.

  2. In a medium-sized bowl, combine flour, baking powder, baking soda, and salt. Stir to combine well. Add to creamed mixture and combine.

  3. Stir in oats, mixing to combine well.

  4. Cover dough with plastic wrap and chill for at least one hour.

  5. Preheat oven to 350*F. Place 1 cup of powdered sugar in small bowl.

  6. Roll dough into 1-inch balls. Roll ball in powdered sugar, coating entire ball evenly. Place on cookie sheet and bake for 8-10 minutes.
