Fruity Vanilla Jello Shots

It's literally a fruit cocktail! Miniature gelatin fruit bowls spiked with vodka.

Ingredients

  • Nonstick cooking spray
  • 1 cup water
  • 4 envelopes unflavored gelatin
  • 1 cup vanilla or whipped cream vodka
  • 7 oz sweetened condensed milk (1/2 can)
  • 1 1/2 cups pineapple juice
  • 1 cup pineapple vodka
  • Food coloring
  • Canned pineapple, finely chopped (for garnish)

    Prepare a mini muffin pan by spraying with nonstick cooking spray and gently wiping out with a paper towel. This will leave just enough residue to help dislodge the shots later. Prepare three small pans for the colored gelatin in the same manner.

    Pour water into a small saucepan and sprinkle with two envelopes of unflavored gelatin. Allow gelatin to soak in a minute or two. Heat on medium and stir until gelatin has dissolved. Remove from heat and pour in sweetened condensed milk and vanilla or whipped cream vodka.

    Transfer to something with a pour spout (such as a measuring cup) and fill cavities of mini muffin pan with the white gelatin mixture. Place in refrigerators for four hours or overnight to allow gelatin to set properly.

    To make the colored gelatin, place pineapple juice in a small saucepan and sprinkle with remaining two envelopes of unflavored gelatin. Allow it to soak in a minute or two. Heat on medium, stirring until gelatin has dissolved. Remove from heat and pour in the pineapple vodka.

    Separate the mixture evenly into the three small prepared pans. Using food coloring, dye each pan to desired colors. (Photo shows red, green and purple/blue.) Allow to set in refrigerator at least two hours or overnight.

    When ready to serve, gently pop the bowls out of the muffin pan and scoop the bowl out with a melon baller. Slice colored gelatin into small squares and fill your bowls, topping with pieces of chopped pineapple as a garnish.

  • These adorable jelly shots aren't served in glasses, but in mini edible jelly shot bowls! As a kid, my mom used to make a special fruit salad we would have at holidays or special occasions. It was basically a combo of fruit and homemade whipped cream. No wonder my sister and I would always ask for seconds! That fruit salad provided the inspiration for these miniature fruity vanilla jelly shots ... they are *literally* a fruit cocktail! All the flavors of a fruit cocktail in an actual fruit cocktail. Bottoms up!
