    Ingredients

    • 1/4  cup olive oil
    • 3  medium shallots, coarsely chopped, or 1/4 cup chopped onion
    • 5  teaspoons red wine vinegar
    • 1/2  teaspoon coarsely ground black pepper
    • 1/2  teaspoon cumin
    • 1/4  teaspoon salt
    • 1  (15-oz.) can Green Giant® or Joan of Arc® Garbanzo Beans, drained
    • 1/3  cup finely chopped celery
    • 1/4  cup finely chopped red onion
    • 1/4  cup diced roasted red pepper or 1 (2-oz.) jar chopped pimiento, drained Lettuce leaves, if desired
    • 2  tablespoons minced fresh parsley

    Directions

    1. 1Heat 2 tablespoons of the olive oil in small skillet over medium heat. Add shallots; cook and stir 3 to 5 minutes or until golden brown and crisp. Drain on paper towel; set aside.
    2. 2In medium bowl, combine remaining 2 tablespoons olive oil, vinegar, pepper, cumin and salt; beat with wire whisk until well blended. Add garbanzo beans, celery, red onion and roasted pepper; toss to coat. Line serving bowl with lettuce leaves; spoon bean mixture over lettuce leaves. Top with shallots and parsley.
