    Ingredients

    • 2 boneless, skinless chicken breasts, cut into thin slices
    • 3 Tbs. vegetable oil
    • 5 Tbs. soy sauce, divided
    • 4 tsp toasted sesame oil, divided
    • 3 cloves garlic, minced
    • 6 rice paper sheets
    • 1 cup cooked vermicelli noodles
    • 2 carrots julienned (or thinly sliced)
    • 2 cups baby spinach
    • 1/2 cup cilantro leaves (or basil, mint)
    • 2 scallions, finely sliced
    • 1 tsp brown sugar
    • 2 Tbs. fresh lime juice

    Directions

    1. 1In a bowl, combine the sliced chicken, vegetable oil, 2 Tbs. soy sauce, 2 tsp sesame oil and the minced garlic. Toss to coat well and marinate in fridge for 20 minutes.
    2. 2Heat a large skillet or wok over medium-high. Add the chicken and sear on all sides until cooked through, about 5 minutes. Remove from heat.
    3. 3Fill a shallow dish with warm water. Add a rice paper sheet, one at a time for 5 to 10 seconds. Remove and place on a flat surface. Layer the cooked vermicelli noodles, the chicken, spinach, carrots and cilantro right in the center of the paper.
    4. 4Fold both ends to the center and roll the sheet as tightly as you can without ripping. Continue with remaining 5 sheets and filling.
    5. 5For the dipping sauce, combine the remaining 3 Tbs. soy sauce, 2 tsp sesame oil, brown sugar, lime juice and scallions. Whisk to combine.
    6. 6Serve spring rolls with dipping sauce.

    These are AMAZING! I made a few changes, though. I used rotisserie chicken (no cooking - yay!) and significantly less oil than specified (for health reasons and also because I wasn't cooking the chicken in it). I added scallions and peanuts (highly recommended) to the filling. I also improvised my own sauce of peanut butter, water, soy sauce, rice vinegar, siracha, lime juice, sesame oil, scallions, pulverized peanuts, and brown sugar (listed in order of relative quantity, from most to least). It was amazing and the presentation is beautiful. This is a surprisingly easy recipe and perfect for a healthy weeknight dinner or entertaining. Thank you so much for it!
