Progresso™ chicken broth provides simple addition to this slow cooked one dish chicken and rice recipe – perfect for dinner.

Ingredients

package (6 oz) original long-grain and wild rice mix
1
medium onion, chopped (1/2 cup)
1
small red bell pepper, chopped (1/2 cup)
1
tablespoon olive or vegetable oil

cloves garlic, peeled
1 3/4
cups Progresso™ chicken broth (from 32-oz carton)
3 1/2
lb bone-in chicken pieces, skin removed

Directions

  • 1 Spray 3- to 4-quart slow cooker with cooking spray. In slow cooker, mix rice, contents of seasoning packet, onion, bell pepper, oil, garlic and broth. Arrange chicken on top.
  • 2 Cover; cook on Low heat setting 5 to 6 hours.
Tips  

To quickly remove the skin from a piece of chicken, hold a paper towel and pull the skin away. Removing the skin before cooking helps reduce the amount of fat in the recipe.

Since the garlic in this recipe is left whole, it is milder than if it were chopped or crushed. The longer, slower cooking also mellows the garlic. If you like, just before serving, use a fork to crush the garlic cloves against the side of the slow cooker and stir into the rice.

Serve with cooked green beans and warm rolls.
