Ingredients

  • 2  cups coarsely chopped onions
  • 1  cup sliced celery
  • 1/4  cup chopped fresh parsley
  • 2  garlic cloves, minced
  • 1/4  cup oil
  • 5  cups beef broth
  • 3 1/2  cups water
  • 1/2  cup dry red wine or water
  • 1  (16-oz.) can (2 cups) tomatoes, undrained, cut up
  • 1  (15-oz.) can tomato sauce
  • 2  cups coarsely chopped cabbage
  • 1  cup sliced carrots
  • 2  teaspoons dry basil leaves
  • 1/4  teaspoon pepper
  • 1 1/2  cups sliced zucchini
  • 1  cup Green Giant® Frozen Cut Green Beans
  • 4  oz. spaghetti, broken into 2 to 3-inch pieces or 1 cup elbow spaghetti
  • 1  (15.5-oz.) can Green Giant® or Joan of Arc® Dark Red Kidney Beans, undrained
  • 1  (15-oz.) can Green Giant® or Joan of Arc® Garbanzo Beans, undrained
  • Prepared pesto sauce

Directions

  1. In 8-quart saucepot, cook and stir onions, celery, parsley and garlic in oil until tender. Stir in beef broth, water, wine, tomatoes, tomato sauce, cabbage, carrots, basil and pepper. Bring to a boil. Reduce heat; cover and simmer 1 hour.

  2. Stir in remaining soup ingredients. Simmer covered an additional 15 to 20 minutes or until vegetables and spaghetti are tender. Serve with pesto sauce and additional Parmesan cheese, if desired.
