Ghost White Chili

Turn any day into a Friday the 13th celebration with this uber-freaky-good, and totally unique approach to White Chicken Chili.

Ingredients

tablespoon olive oil
1
small white onion, chopped
1
teaspoon minced garlic (or two cloves fresh garlic, chopped)

(5 ounce) cans cooked chicken
1
(4.5 ounce) Old El Paso™ chopped green chiles
1 1/2
cups frozen white corn
2
cans lite coconut milk
2
cans white Northern beans
White pepper to taste
Salt to taste
1
cup Monterey Jack cheese, for garnish
1/4
cup chopped cilantro

Directions

  • 1 In a large pot, heat olive oil over medium high heat.
  • 2 Add onions and garlic and cook until softened.
  • 3 Add chicken, chilies, corn, coconut milk, and beans to the pot. Heat until steaming.
  • 4 Season with salt and pepper.
  • 5 Top with shredded Monterey Jack cheese and cilantro.
  • 6 Serve and enjoy!

Don't let this Friday the 13th pass you by. Get your superstition on with this super quick Ghost White Chili recipe!


With a day like Friday the 13th, you can't just let your dinnertime go down the drain. Instead, turn it into a sensationally fun feast that nods to a superstitiously freaky Friday! This Ghost White Chili is just the thing for such a day (or any day!).

You're gonna need some garlic! Toss it into a bit of olive oil in a large pot with half a chopped white onion.

Minced Garlic

Add a can of cooked chicken. You can use fresh chicken breast, too. But we're keepin' it easy here, so don't go be an overachiever.

A can of green chilies goes right in. No need to drain 'em!

White corn -- this lends just a bit of sweetness to the final bowl of chili. So yummy!
