Ingredients

cup apricot preserves
1/2
cup chili sauce

tablespoon fresh lemon juice

boneless skinless chicken breast halves

Directions

  • 1 Heat grill. In small saucepan, melt apricot preserves over low heat. Stir in all remaining ingredients except chicken. Simmer 5 minutes, stirring frequently. Remove from heat; set aside.
  • 2 When ready to grill, place chicken breast halves on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 5 minutes.
  • 3 Turn chicken; cook an additional 3 to 7 minutes or until chicken is fork-tender and juices run clear, brushing both sides of chicken with preserves mixture during last 1 to 2 minutes of cooking time. Bring any remaining preserves mixture to a boil; serve with chicken. If desired, garnish chicken with lemon peel twists or bows.
Tips  

Leftover fresh ginger root can be stored for a short time in the crisper drawer of the refrigerator. For longer storage, freeze it in a small moisture-vaporproof plastic bag. The unpeeled frozen root is easy to grate.

To broil chicken, place on broiler pan; broil 4 to 6 inches from heat using times above as a guide, brushing with preserves mixture and turning as directed.

• Keep Meats refrigerated until grilling time (except for 15 minutes or so of marinating at room temperature). • To avoid cross-contamination, do not use the same cooking tools for raw and cooked meats. Wash in hot, soapy water all utensils, cutting boards and dishes used to handle raw meat. • If you're cooking two kinds of meat at once, such as chicken breasts and hamburgers, keep them well separated on the grill and use separate utensils for each.
