    Ingredients

    • 1 lb carrots, peeled and cut into 3 pieces each
    • 1 lb parsnips, peeled and cut into 3 pieces each
    • 1/4 cup unsalted butter, melted
    • 1/4 cup light brown sugar
    • 1/2 tsp kosher salt

    Directions

    1. 1Preheat oven to 400 degrees.
    2. 2Add the carrots and parsnips to a casserole dish (with a lid). Stir together the butter, brown sugar and salt. Pour over the carrots and parsnips. Cover.
    3. 3Slide the casserole into the oven and bake for 30-40 minutes, until tender. Serve warm.
    4. 4This can be made up to two days in advance.
