Blogger Cheri Liefeld of Adventures in the Kitchen shares a recipe for gluten-free Apple Streusel Cheesecake Bars.

Ingredients

box Betty Crocker™ Gluten Free yellow cake mix
1/4
cup light butter with canola oil
1/4
cup applesauce
2
medium baking apples, peeled, finely chopped
2
tablespoons granulated sugar
2
tablespoons water
1
teaspoon ground cinnamon
2
packages (8 oz each) 1/3-less-fat cream cheese (Neufchâtel), softened
1/4
cup packed brown sugar
1
teaspoon gluten-free vanilla
1/4
cup fat-free egg product
1/3
cup chopped walnuts

Directions

  • 1 Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • 2 In large bowl, place cake mix. With pastry blender or fork, cut in butter and applesauce until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumb mixture in bottom of pan. Bake 10 minutes.
  • 3 Meanwhile, in 10-inch skillet, cook apples, granulated sugar and water over medium heat about 10 minutes, stirring occasionally, until apples are tender. Stir in cinnamon; set aside.
  • 4 In separate large bowl, beat cream cheese, brown sugar, vanilla and egg product with electric mixer on medium speed until smooth.
  • 5 Spread cream cheese mixture evenly over partially baked crust. Spoon apple mixture evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
  • 6 Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.
Tips  

For best results, make sure cream cheese is at room temperature.
