If you are looking for a flavor-filled recipe that can be on the table in less than 30 minutes, this is it. The combination of citrus and soy in this soba noodle salad are sure to be a hit.

Ingredients

Dressing

cup orange juice
1/4
cup lime juice

tablespoons gluten-free reduced-sodium soy sauce

tablespoons rice vinegar

tablespoon sesame oil

tablespoon honey

tablespoon brown sugar, packed

teaspoon Sriracha sauce

green onions, sliced on the diagonal (about 1/2 cup)

tablespoon finely chopped gingerroot

Salad

12
oz uncooked gluten-free soba (buckwheat) noodles

bunch (8 oz) fresh kale; ribs removed, leaves thinly sliced (6 cups)

cup frozen shelled edamame

cups shredded cooked chicken breast

tablespoon sesame seed

Directions

  • 1 In large bowl, beat Dressing ingredients with whisk; set aside.
  • 2 Heat Dutch oven two-thirds filled with water to boiling. Add noodles; return to boiling. Boil 2 minutes; add kale and edamame. Return to boiling; cook 4 minutes. Drain noodle mixture; rinse under cold water until noodles are cool. Toss to remove excess water.
  • 3 Add noodle mixture and chicken to dressing. Toss to thoroughly coat. Sprinkle with sesame seed.
Tips  

Cover and refrigerate any remaining salad, and use within 3 days.
