You'll never guess what makes these decadent cupcakes lower in fat--zucchini! Your guests will never know the difference; plus, they are gluten free.

Ingredients

Cupcakes

box Betty Crocker™ Gluten Free devil's food cake mix

cup grated peeled zucchini
1/4
cup butter, softened
2/3
cup buttermilk
1/4
teaspoon baking soda

Cream Cheese Icing

1
tablespoon butter
4
oz (half of 8-oz package) 1/3-less-fat cream cheese (Neufchâtel), softened
1 1/2
cups powdered sugar, sifted
1
teaspoon fat-free (skim) milk
1/4
teaspoon gluten-free vanilla

Garnish, if desired

Chocolate shavings

Directions

  • 1 Heat oven to 350°F. Place paper baking cup in each of 15 regular-size muffin cups.
  • 2 In large bowl, beat Cupcake ingredients on low speed with electric mixer 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter among muffin cups, filling each two-thirds full.
  • 3 Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely on cooling rack, about 30 minutes.
  • 4 In medium bowl, beat Icing ingredients with electric mixer on medium speed 1 minute, scraping bowl occasionally. Frost cooled cupcakes with icing. Top with chocolate shavings.
