Indulge in this gluten-free version of the classic layered mint brownie bar.

Ingredients

Brownie Base

1
box Betty Crocker™ Gluten Free brownie mix
Butter and egg called for on brownie mix box

Filling

1 1/4
cups powdered sugar
1
tablespoon butter, softened
2
oz 1/3-less-fat cream cheese (Neufchâtel)
2
teaspoons fat-free (skim) milk
1/8
teaspoon mint extract
1
drop green food color

Topping

1/4
cup semisweet chocolate chips
3
tablespoons whipping cream

Directions

  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Spray bottom of 8-inch square pan with cooking spray. Make and bake brownie mix as directed on box. Cool completely, about 1 hour.
  • 2 In medium bowl, beat Filling ingredients with electric mixer on low speed until combined; increase to medium speed until smooth. Spread over cooled brownies. Refrigerate about 30 minutes or until set.
  • 3 Meanwhile, in small microwavable bowl, microwave Topping ingredients uncovered on High 30 seconds; stir. Microwave 15 to 30 seconds longer or until cream is hot and chips can be stirred smooth. Let stand 10 minutes, stirring occasionally.
  • 4 Drizzle topping evenly over mint filling. Refrigerate about 30 minutes or until topping is set. Cut into 4 rows by 4 rows. Cover and refrigerate any remaining brownies.
Tips

Always read labels to make sure each recipe ingredient is gluten free. Products and ingredient sources can change.

Small amounts of mint extract provide a lot of impact. If you like more of a mellow mint flavor, add the mint extract gradually to the filling, tasting as you go.

For easier cutting and quick cleanup, line pan with foil, then spray foil with cooking spray. After the bars are completely set, lift bars out of pan with foil to cutting board. Peel foil back from sides, and cut bars.
