Ingredients

  • 1  cup Fiber One® cereal
  • 1 1/4  cups very hot water
  • 3 1/4  to 3 1/2 cups Bisquick® Reduced-Fat baking mix
  • 1  package regular or quick active dry yeast
  • 2  tablespoons pesto
  • 1  egg or 1/4 cup fat-free cholesterol-free egg product
  • 2  eggs or 1/2 cup fat-free cholesterol-free egg product
  • 1/3  cup plain or garlic and herb-flavored goat or feta cheese, crumbled
  • 2  teaspoons dried rosemary leaves
  • 1/4  teaspoon crushed red pepper, if desired

Directions

  1. Grease 12-inch pizza pan. Stir together cereal and very hot water; let stand 5 minutes.

  2. Stir together 2 1/2 cups of the baking mix and the yeast in large bowl. Stir in cereal mixture, pesto and 1 egg. Stir in remaining baking mix until dough forms. Cover; let rest 10 minutes. Press dough on bottom and side of pan. Cover with plastic wrap; let rise in warm place 20 to 30 minutes or until slightly puffy. Remove plastic wrap. Beat 2 eggs slightly in small bowl using fork; stir in cheese, rosemary and red pepper. Spread over dough.

  3. Heat oven to 400º. Bake 20 to 25 minutes or until brown and crispy. Cool; cut into wedges.
