    Ingredients

    • 2  large acorn squash, cut into halves, seeded
    • Hot water
    • 3/4  lb. smoked sausage, sliced
    • 1  (15 1/2-oz.) can Joan of Arc Fancy Red Kidney Beans, drained
    • 1/2  cup coarsely chopped walnuts
    • 1/2  cup golden raisins
    • 1  medium green apple, unpeeled, cored, cut into 1/2-inch pieces
    • 1/4  cup firmly packed light brown sugar
    • 1/4  teaspoon cinnamon
    • 1/8  teaspoon nutmeg
    • 1/4  cup margarine or butter
    • Endive or parsley, if desired

    Directions

    1. 1Heat oven to 375°F. In ungreased 13x9-inch pan, place squash cut sidesdown; add 1/2-inch hot water. Cover. Bake at 375°F. for 20 minutes. Meanwhile, in medium skillet, brown sausage; drain. In large bowl, combinesausage, beans, walnuts, raisins and apple; mix well. In small bowl,combine brown sugar, cinnamon and nutmeg; mix well. Sprinkle oversausage-bean mixture; toss lightly.
