  • 2 8lb. geese
  • 3 Tablespoons grated onion
  • 4 teaspoons grated carrots
  • 2 bay leaves
  • 1/2 teaspoon marjoram
  • 1 teaspoon sage, crushed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups white wine

Directions

  1. Remove breasts from bone. Remove skin.

  2. In a large dish, combine the rest of the ingredients. Mix well. Add goose breasts and marinate at least 8 hours. Turning occasionally.

  3. After marinating 8 hours or longer, remove breasts and pat dry.

  4. Place on broiling rack and broil for 10 minutes on each side.
