Ingredients

8lb. geese
3
Tablespoons grated onion
4
teaspoons grated carrots

bay leaves
1/2
teaspoon marjoram
1
teaspoon sage, crushed
1
teaspoon salt
1
teaspoon black pepper
2
cups white wine

Directions

  • 1 Remove breasts from bone. Remove skin.
  • 2 In a large dish, combine the rest of the ingredients. Mix well. Add goose breasts and marinate at least 8 hours. Turning occasionally.
  • 3 After marinating 8 hours or longer, remove breasts and pat dry.
  • 4 Place on broiling rack and broil for 10 minutes on each side.
