Grandma's Apple Pie

My grandma used to make this pie for birthdays instead of cake. It's a family favorite of ours now any time of year and for any occasion. A true classic!

    Ingredients

    • 3 lbs Jonathon apples, peeled, cored and sliced
    • 1 cup sugar
    • 1/2 tsp cinnamon
    • 1 1/2 Tbsp flour
    • 2 unbaked pie crusts (see my Old-Fashioned Pie Crust recipe)
    • 1  egg white
    • 1 tsp cold water
    • sugar to sprinkle

    Directions

    1. 1Preheat oven to 450 degrees.
    2. 2Place bottom crust in an 8" or 9" pie pan (I prefer xxxxxxx
    3. 3a small bowl, combine sugar, cinnamon and flour and mix until well blended.
    4. 4In large bowl, place prepared apples. Add sugar mixture and stir to coat all slices. Heap apple mixture into prepared crust.
    5. 5Cover with top crust, trim and crimp edges to seal. Mix egg white with tsp of water. Using a pastry brush, brush egg white over top crust and immediately sprinkle with sugar. Slit top to vent.
    6. 6Place pie in preheated 450 degree oven and bake for 15 minutes. Reduce heat to 350 degrees and bake an additional 45 minutes, until apples are tender and crust is golden. Remove to cooling rack and cool completely before cutting and serving.
    7. 7Tips: Cut decorative shapes from extra crust dough (see photo). Use egg white to "paste" to top crust before sugaring top (Step 5).
    8. 8About the apples: Use only baking apples for apple pie. I like Jonathon, Granny Smith or MacIntosh varieties. Eating apples, such as Red Delicious, do not "cook down" and remain firm after baking.
    9. 9To avoid a messy oven: place foil on the bottom of the oven before preheating. If pie boils over, simply remove the foil and recycle.
