Ingredients

  • 1  tablespoon olive or vegetable oil
  • 1  pound beef boneless sirloin, cut into 1-inch pieces
  • 1  medium onion, chopped (1/2 cup)
  • 2  cloves garlic, finely chopped
  • 1 1/2  cups beef broth
  • 3/4  cup uncooked couscous
  • 5  roma (plum) tomatoes, coarsely chopped (2 cups)
  • 2  tablespoons chopped fresh or 2 teaspoons dried oregano leaves
  • 1/4  teaspoon pepper
  • 1/2  cup crumbled feta cheese (2 ounces)

Directions

  1. Heat oil in 10-inch skillet over medium-high heat. Cook beef, onion and garlic in oil, stirring occasionally, until beef is brown. Stir in broth; heat to boiling.

  2. Stir in couscous, tomatoes, oregano and pepper; remove from heat. Cover and let stand about 5 minutes or until liquid is absorbed. Sprinkle with cheese.
