Plain-old guac gets a Mediterranean makeover with this fun recipe twist! Fresh basil, kalamata olives, sundried tomatoes, and zesty lemon join avocado in this quick & healthful dip.

Ingredients

  • 3 small avocados, very ripe
  • 1/2 small shallot, finely diced
  • 2 tablespoons roasted red peppers OR sundried tomatoes, finely diced
  • 1/4 cup fresh basil, finely chopped
  • 2 tablespoons kalamata olives, finely chopped
  • 1 lemon, squeezed (reserve juice; remainder can be discarded)
  • Salt to taste
  • 1 bag Food Should Taste Good™ olive tortilla chips

Steps

    In a medium bowl, use a fork to smash the avocado until chunky.
  • 2
    Mix in the shallot, roasted red peppers or sundried tomatoes, basil, olives, and lemon juice. Salt to taste.
