    Ingredients

    • 1 1/2 pounds ground beef
    • 1 (6 ounce) package dry Italian food dressing mix
    • 10  Old El Paso taco shells
    • 2 cups spinach
    • 1 (14.5 ounce) can Muir Glen Fire Roasted diced tomatoes, drained
    • 1/3 cup chopped kalamata olives
    • 1/3 cup chopped marinated artichoke hearts
    • 1 cup feta cheese
    • 1/3 cup balsamic vinegar
    • 1/2 cup olive oil

    Directions

    1. 1In a small bowl, whisk together the balsamic vinegar and olive oil. Salt and pepper to taste. Set aside.
    2. 2In a large saucepan, cook the ground beef over medium heat until nearly browned.
    3. 3Sprinkle the dry Italian seasoning over the meat, then cook until brown. Remove from heat.
    4. 4Layer spinach in bottoms of taco shells. Spoon ground beef over spinach. Top with drained fire roasted tomatoes, olives, artichokes, and feta. Drizzle with balsamic dressing just before serving.
