Greek Meets Mex Tacos

Ingredients

  • 1 1/2 lbs ground beef
  • 1 package (6 oz) dry Italian food dressing mix
  • 10 taco shells from 1 box (4.6 oz) Old El Paso™ Crunchy Taco Shells (12 Count)
  • 2 cups spinach
  • 1 can (14.5 oz) Muir Glen™ Organic Diced Tomatoes Fire Roasted, drained
  • 1/3 cup chopped kalamata olives
  • 1/3 cup chopped marinated artichoke hearts
  • 1 cup feta cheese
  • 1/3 cup balsamic vinegar
  • 1/2 cup olive oil

Steps

    In a small bowl, whisk together the balsamic vinegar and olive oil. Salt and pepper to taste. Set aside.

    In a large saucepan, cook the ground beef over medium heat until nearly browned.

    Sprinkle the dry Italian seasoning over the meat, then cook until brown. Remove from heat.

    Layer spinach in bottoms of taco shells. Spoon ground beef over spinach. Top with drained fire roasted tomatoes, olives, artichokes, and feta. Drizzle with balsamic dressing just before serving.
