A hearty dinner ready in 15 minutes! Garbanzo beans provide simple addition to pita pizzas - perfect if you love Greek cuisine.

Ingredients

1
(15-oz.) can garbanzo beans, drained, rinsed
2
small garlic cloves
2
tablespoons skim milk
2
tablespoons fresh lemon juice
6
(8-inch) pita (pocket) breads
1
large tomato, chopped
4
oz. (1 cup) crumbled basil and tomato-flavored feta cheese
1/4
cup sliced ripe olives
2
tablespoons chopped fresh parsley

Directions

  • 1 Heat oven to 425°F. In food processor bowl with metal blade or blender container, combine beans, garlic, milk and lemon juice; cover and process until smooth.
  • 2 Spread about 3 tablespoons mixture onto each pita bread. Place on ungreased cookie sheets. Top each with tomato, cheese, olives and parsley.
  • 3 Bake at 425°F. for 5 minutes or until pizzas are thoroughly heated and cheese is melted.
Tips

If flavored feta cheese isn´t available, use regular feta plus a little fresh or dried basil.
