Ingredients

cup Fiber One™ original bran cereal
3/4
cup Yoplait® Fat Free plain yogurt
1 1/2
teaspoons Greek seasoning
1
cup tightly packed fresh baby spinach leaves, finely chopped

lb extra lean (at least 93%) ground beef

whole wheat mini burger buns or dinner rolls, split
1/4
cup reduced-fat crumbled feta cheese (1 oz)

thin slices plum (Roma) tomato (from 3 medium)

Directions

  • 1 Heat oven to 350°F. Spray broiler pan rack with cooking spray. Place cereal in resealable food-storage plastic bag; seal bag and finely crush with rolling pin or meat mallet (or finely crush in food processor).
  • 2 In large bowl, mix cereal, yogurt and Greek seasoning (mixture will be thick). Let stand 5 minutes. Add chopped spinach and beef; mix until thoroughly blended.
  • 3 Shape mixture into 10 small patties, about 1/2 inch thick. Place on rack in broiler pan. Bake 18 to 22 minutes or until meat thermometer inserted in center of patties reads 160°F.
  • 4 Meanwhile, place dinner rolls on baking sheet, cut sides up. Spoon about 2 teaspoons feta cheese on top half of each dinner roll. Bake 3 to 5 minutes or until cheese is softened and rolls are warm.
  • 5 Place a burger on bottom half of each dinner roll. Top each with 2 spinach leaves, 2 tomato slices and top half of bun.

Tips  

Ground turkey can be substituted for the ground beef.

Prepare patties ahead of time, cover and refrigerate until ready to cook.
