Who would have guessed it? These burgers are meatless!

Ingredients

cup Old El Paso™ Vegetarian Refried Beans
1/2
cup Progresso™ Plain Bread Crumbs
1/2
cup frozen corn
1/4
cup finely chopped onion

tablespoons Old El Paso™ Chopped Green Chiles
1
teaspoon cumin
1/2
teaspoon salt
1
egg
1
tablespoon olive oil
4
lettuce leaves
4
slices tomato
4
burger buns, split

Directions

  • 1 In large bowl, combine beans, bread crumbs, corn, onion, chiles, cumin, salt and egg; mix well.
  • 2 Heat oil in 12-inch nonstick skillet over medium-high heat until hot. Spoon mixture into skillet forming 4 mounds; flatten each to form 1/2-inch-thick patty. Cook 6 to 8 minutes or until thoroughly heated and lightly browned, turning once.
  • 3 Place lettuce, cooked patties and tomato slices on bottom halves of buns. If desired, top with ketchup or mustard. Cover with top halves of buns.
