Ingredients

  • Pork
  • 2  teaspoons canola oil
  • 2  pork tenderloins (3/4 lb each)
  • 1  teaspoon black pepper
  • 1/4  to 1/2 teaspoon ground red pepper (cayenne)
  • 1/2  teaspoon salt
  • Pineapple Salsa
  • 1  can (8 oz) pineapple tidbits in juice, drained
  • 4  medium green onions, sliced (1/4 cup)
  • 1/4  cup chopped red bell pepper
  • 2  tablespoons chopped fresh or 2 teaspoons dried mint leaves
  • 1/2  teaspoon grated lime peel
  • 2  teaspoons lime juice

Directions

  1. 1Heat coals or gas grill. Rub 1 teaspoon oil onto each pork tenderloin; sprinkle with black pepper, red pepper and salt.
  2. 2Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 160°F.
  3. 3Meanwhile, in medium bowl, stir together salsa ingredients. Cut pork into 1/2-inch slices. Serve with salsa.
