Spice up dinner with a dry rub-seasoned succulent pork dish that's company ready and family friendly.

Ingredients

Pork

teaspoons canola oil
1
pork tenderloin (1 1/4 lb)

teaspoon black pepper
1/4
teaspoon ground red pepper (cayenne)

teaspoon salt

Pineapple Salsa

1
can (8 oz) pineapple tidbits in juice, drained

medium green onions, sliced (1/4 cup)
1/4
cup chopped red bell pepper

tablespoons chopped fresh or 2 teaspoons dried mint leaves
1/2
teaspoon grated lime peel

teaspoons lime juice

Directions

  • 1 Heat coals or gas grill. Rub oil onto pork tenderloin; sprinkle with black pepper, red pepper and salt.
  • 2 Carefully brush oil on grill rack. Place pork on grill over medium heat. Cover grill; cook 20 to 30 minutes, turning 3 times, until pork has slight blush of pink in center and meat thermometer inserted in center reads 145° F.
  • 3 Meanwhile, in medium bowl, stir together salsa ingredients. Cut pork into 1/2-inch slices. Serve with salsa.
Tips  

Any variety of green vegetables makes an easy and tasty side dish.
