Vegetarian? Try this delicious take on the gyro! With tofu marinated in a yogurt-cucumber sauce, grilled, and stuffed in a pita with fresh veggies.

Ingredients

Yogurt-Cucumber Sauce

container (6 oz) Yoplait® Greek Fat Free plain yogurt

cup chopped cucumber

teaspoons fresh lemon juice

Gyros

1/3
cup fresh lemon juice

tablespoons olive oil
1
teaspoon dried oregano leaves
1/2
teaspoon salt-free garlic-pepper blend
1
package (12 oz) extra-firm tofu, drained, rinsed and patted dry
1
red bell pepper, cut into thin strips
1
medium red onion, cut into 1/4-inch strips (about 2 cups)
4
whole wheat pita (pocket) breads (6 inch), cut in half to form pockets
Cooking spray

cup shredded romaine lettuce

Directions

  • 1 In small bowl, mix all sauce ingredients; refrigerate until serving time.
  • 2 In shallow glass dish, mix 1/3 cup lemon juice, the oil, oregano and garlic-pepper blend with whisk. Reserve 2 tablespoons marinade; set aside. Cut tofu crosswise into 8 (1/2-inch) slices. Add to marinade in dish and turn to coat. Cover; refrigerate at least 30 minutes but no longer than 8 hours.
  • 3 Heat gas or charcoal grill. Remove tofu from marinade, reserving marinade; set aside. Cut 18x18-inch sheet of heavy-duty foil; fold or roll up edges of foil. Spray foil with cooking spray. Place bell pepper and onion on foil; drizzle with reserved 2 tablespoons marinade. Place on grill over medium-high heat. Cover grill; cook 5 to 6 minutes, turning occasionally, until tender. Place tofu on grill next to vegetables. Cook 4 to 6 minutes, turning once and basting occasionally with reserved tofu marinade, until lightly browned. Remove vegetables and tofu from grill to plate; cover to keep warm.
  • 4 Spray both sides of pita pockets with cooking spray. Place on grill over medium-high heat. Cover grill; cook 2 minutes, turning once, until toasted.
  • 5 For each sandwich, place 1 tofu slice in each pita pocket. Tuck grilled vegetables on one side of tofu and lettuce on other side. Top with sauce.

Tips  

Add 2 tablespoons crumbled feta cheese to each pita half for an additional 50 calories per serving.
