Delicate fish steaks take on the vibrant flavors of orange and fresh ginger in this grilled delight.

Ingredients

Grated orange peel
Orange juice
Finely chopped gingerroot
Vegetable oil
Fish steak

Directions

  • 1 Mix orange peel, orange juice, gingeroot and oil (about 1 teaspoon grated orange peel, 1/4 cup orange juice, 1 teaspoon finely chopped gingerroot and 2 teaspoons oil per pound of fish). Marinate fish in orange juice mixture at least 1 hour before grilling. Remove fish from mariade; reserve marinade.<BR><BR> <B>To Grill:</B> Spray grill rack with cooking spray before heating grill. Place fish steaks on grill rack. Cover and grill 4 inches from medium heat 10 to 20 minutes, brushing occasionally with marinade and turning once, until fish flakes easily with fork.
  • 2 <B>To Broil:</b> Place fish on rack in broiler pan. Broil fish with tops about 4 inches from heat 9 to 11 minutes, brushing occasionally with marinade and turning once, until fish flakes easily with fork.
