Check out this delicious salad made with potato and frozen green beans – the perfect grilled side dish to compliment your meal.

Ingredients

1 1/2
cups frozen cut green beans
1
(1 lb. 4-oz.) pkg. refrigerated new potato wedges
1/2
cup purchased French vinaigrette or oil and vinegar salad dressing
1/2
cup red onion slivers
1
teaspoon chopped fresh parsley

Directions

  • 1 Heat grill. Place green beans in medium microwave-safe bowl with 1 tablespoon water. Microwave on HIGH for 4 to 6 minutes or until crisp-tender; drain. Set aside.
  • 2 Place potatoes in large bowl. Add 1 tablespoon of the salad dressing; toss to coat. Spoon potatoes into grill basket.
  • 3 When ready to grill, place grill basket on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 15 to 20 minutes or until potatoes are tender, stirring occasionally. During last 5 minutes of cooking time, stir onion into potatoes.
  • 4 In large bowl, combine cooked green beans, potatoes, onion and remaining salad dressing; mix well. Sprinkle with parsley. Serve immediately, or cover and refrigerate 1 hour to chill before serving.
Tips

To broil potatoes, spray broiler pan with nonstick cooking spray; arrange potatoes in single layer on sprayed pan. Broil 4 to 6 inches from heat for 20 minutes, stirring every 5 minutes. Add onions; broil an additional 5 minutes.
