Betty Crocker's Heart Healthy Cookbook shares a recipe! Dinner ready in just 25 minutes! Serve this gyro salad topped with cucumber, onion, tomato and beef with yogurt dressing.

Ingredients

Yogurt Dressing

cup Yoplait® plain fat-free yogurt

cup reduced-fat sour cream

cup fat-free (skim) milk

teaspoon Greek seasoning

Salad

1-pound beef boneless sirloin steak, 1 to 1 1/2 inches thick

tablespoon canola or soybean oil
1 1/4
teaspoons Greek seasoning

cups torn mixed salad greens

medium cucumber, thinly sliced (1 1/2 cups)
1
small red onion, thinly sliced and separated into rings
1
large tomato, chopped (1 cup)

Directions

  • 1 In small bowl, mix all Yogurt Dressing ingredients with whisk until creamy; set aside.
  • 2 Cut beef across grain into 4 x 1/4-inch strips. Heat oil in 12-inch nonstick skillet over medium-high heat. Add beef to skillet; sprinkle with Greek seasoning. Cook, about 5 minutes, stirring frequently, until beef is brown. Drain if necessary.
  • 3 Arrange salad greens on serving platter or individual serving plates. Top with cucumber, onion, tomato and beef. Serve with dressing.

Tips  

Learn to use lower-fat meats and dressings in your favorite recipes. For example, beef sirloin, a very lean cut of meat, is used here instead of the lamb typically used in gyros.
