B Smith, restauranteur, author, and respected expert in affordable-yet-elegant living shares a delicious recipe! Looking for a hearty breakfast made using Original Bisquick® mix? Then try these ham pancakes that are topped with pineapple sauce - ready in 25 minutes.

Ingredients

Pineapple Sauce

1
can (8 oz) crushed pineapple
1/2
cup pineapple preserves
1
tablespoon brown sugar
1/2
teaspoon ground ginger
1/4
to 1/2 teaspoon red pepper flakes

Pancakes

2
packages (6 oz each) Canadian bacon slices
2
cups Original Bisquick™ mix
1 1/4
cups milk
2
eggs

Directions

  • 1 In 1-quart saucepan, combine all sauce ingredients. Heat to boiling; reduce heat to medium. Cook and stir about 2 minutes or until mixture is slightly thickened. Remove from heat; cool to room temperature.
  • 2 Heat oven to 300F. Place Canadian bacon slices on 15x 10-inch baking sheet. Place in oven until hot and ready to serve.
  • 3 In medium bowl, stir together Bisquick, milk and eggs. Spoon about 2 tablespoons batter for each pancake onto hot griddle. Cook until edges are dry; turn. Cook until golden brown.
  • 4 To make sliders; place one slice Canadian bacon on each of 10 pancakes; top with pineapple sauce and additional pancake.
