    Ingredients

    • 1 cup light or dark brown sugar
    • 2 tablespoons water
    • 6 tablespoons butter
    • 1/2 teaspoon salt
    • 1/2 teaspoon cider vinegar
    • 3/4 cup heavy cream, divided
    • 1/2 teaspoon rum extract
    • 4 12 ounce bottles cream soda

    Directions

    1. 1In a small saucepan over medium, combine the brown sugar and water. Bring to a gentle boil and cook, stirring often, until the mixture reads 240 F on a candy thermometer.
    2. 2Stir in the butter, salt, vinegar and 1/4 of the heavy cream. Set aside to cool to room temperature.
    3. 3Once the mixture has cooled, stir in the rum extract.
    4. 4In a medium bowl, combine 2 tablespoons of the brown sugar mixture and the remaining 1/2 cup of heavy cream. Use an electric mixer to beat until just thickened, but not completely whipped, about 2 to 3 minutes.
    5. 5To serve, divide the brown sugar mixture between 4 tall glasses (about 1/4 cup for each glass). Add 1/4 cup of cream soda to each glass, then stir to combine. Fill each glass nearly to the top with additional cream soda, then spoon the whipped topping over each.

    There's no real recipe for this. In the end, make it as you want it. It's supposed to be a less sweet butterscotch taste, if I remember correctly. I was actually happy just chilling cream soda and whipping up heavy whipping cream with butterscotch syrup. There's a more fancy version that uses icecream. I'm tempted to just make Tudor style butterbeer, then adding a little butterscotch. I'm sure that'll be the most authentic.

    Hi sburge23! Each glass will have 12 oz of cream soda + 2 oz of brown sugar mix + whipped cream. So, the glass needs to be big enough for 14 oz of liquid and still leave enough room to be topped with whipped cream. Hope this helps!

I used 1 T of the syrup in each glass, then about 6 oz of soda - when you mix the two, a light foam appears on the surface of the soda. Then I added a dollop of the cream/syrup mixture to the top of each glass, and voila = homemade Butterbeer. I found the color of the soda to be lighter than that purchased at Islands of Adventure, and the resulting soda and cream was not exact, but pretty close. I did not find the soda too sweet since I added only 1 T to each serving, but I think if I added more of the syrup, it would have been closer to the original in taste. Very tasty, and as close as I'm getting to the original since I'm never standing in line at IoA again for any ride, or any Butterbeer, LOL

    Visited Orlando last November. Arrived home wanting more Butterbeer. Had no recipe, but tried using Dad's Cream Soda (really cold) mixed with Whipping Cream (dairy/carton type) (very cold). Just poured cream soda into glass and topped with some of the whipping cream. Wasn't perfect, but we enjoyed it. In an effort to improve the flavor, tried adding just a tidbit of plain Dad's Root Beer. Thouht the first one tasted better. Will try whipping the cream a little the next time. This recipe may not be as close to the one at Disney, but its a whole lot cheaper to make, and its also a whole lot healthier sans the butter, brown sugar and rum. Suits us OK.

So I tried adjusting some portions and changing the method slightly and came up with what I think is closer to the Harry Potter World Butterbeer. Anyone who has been there can tell you that what comes out of the Butterbeer tap is straight cream soda. The liquid is translucent, and has no foam like this recipe does when you mix the cream soda with the brown sugar mix. So try this: DO NOT premix cream soda with brown sugar mix. Instead, Using an electric mixer, mix 1/4 cup brown sugar mix with 1 cup of heavy cream; mix until slightly stiff. (2 minutes is too long). Poor COLD cream soda into a glass until almost full. Dollop desired amount of whipped cream concoction on top. Done. This also extends the recipe so that it will make more Butterbeer, but I haven't yet tried to determine how much. I welcome your comments.

    I tried this last night and made it for adults so chose to use bacardi golden rum. One shot per glass and omitted the extract. I would have drank myself into a diabetic coma if we had made more. Thank goodness we only made one batch. It was amazing. I will make again.

I could only stomach half my glass. 6 tbs is three fourths of a stick of butter spread between 4 glasses. The Universal version had a great butterscotch flavor and didn't leave you burping up a butter after taste.

    To the person who asked about the kid-friendly version: Rum extract (as most extracts do) has alcohol in it. But at the same time, you do not use much in the recipe so it depends on you whether or not to use it. The only real difference would be a slight taste difference.

    Super yummy! Just made it for the first time, we didnt have any rum extract but it still turned out great! Very, very sweet, so this is only an occasional treat.

    I just made this and it tasted exactly how I always hoped butterbeer would. Thank you for this recipe, I'm going to use it for all my nerdy Harry Potter parties. One thing though, I think taste depends a lot on the cream soda you used. I used A&W and it tasted awesome.
