Havarti Hearty Attack

Make giant, Havarti cheese-stuffed baked potatoes on the grill! Makes a perfect side dish or summertime meal, or add meats and other yums for a hearty entree!

Ingredients

4
baking potatoes

thick slices Havarti cheese (dilled, jalapeño, or traditional flavor)
2
tablespoons fresh basil, chopped
2
tablespoons fresh dill, chopped
1/4
cup scallions, chopped
4
tablespoons butter, melted
salt and pepper to taste
for Yogurt topping, Yoplait® Greek Frozen Yogurt if desired

Directions

  • 1 Pierce potatoes with a fork. Place in microwave and cook for 12-14 minutes, or until tender.
  • 2 Remove potatoes from microwave, allow to cool slightly. Use a knife to remove a 1/2 inch slice from the top center of each potato.
  • 3 Stuff Havarti slices and herbs and scallions into each potato. Drizzle each potato with 1 Tbsp butter and salt and pepper to taste.
  • 4 OPTIONAL: If you want to make them extra hearty, add folded thin-cut slices of deli roast beef, bacon bits, corn kernels, peas, broccoli florets or other toppings of your choice. Or, add toppings after cooking (potato-bar style).
  • 5 Cover potatoes in foil. Toss on grill and cook for 15-20 minutes over high heat until all ingredients are thoroughly heated. Serve and enjoy!
  • 6 OPTIONAL TOPPING: Top with cool, creamy Yoplait®Greek yogurt instead of sour cream, if desired!

Baked taters on the GRILL? Ah huh. With melty Havarti cheese. And herbs. Hearty enough to be its own meal.


Baked potatoes are good, but who wants to heat up the kitchen this summer with an oven baking for hours? Not you!

Which is why we've got you covered with this easy, delicious for Havarti cheese & herb stuffed baked potatoes ON THE GRILL. Add deli meat, if ya want, and it's a meal.

And, oh, yes. We said it. ON THE GRILL.

Get it up all in yo' grill. Because. Yo.

So, here's the secret. It's not totallllly all made on the grill. You start by popping yo big ol' baked potatoes into the microwave. Just zap 'em until tender.

Then, this is where things start to take a turn for the AWESOME.

Remove the baked potatoes from the microwave and allow them to cool slightly, then use a knife to slice a 1/2" strip from the center of the potatoes. Remove the slice and discard. You ain't gonna need it. You're stuffing these potatoes to the gillz with cheese and herbs.

Which, as it turns out, is the next step. Stuff yo' stuff.

Squash a big strip of Havarti cheese right into the empty space in that potato. Sprinkle with herbs. And salt and pepper. And more herbs. Fresh chopped dill, basil, parsley. It sounds like a Simon and Garfunkel song, but it's a potato. Get on board with it.

Cover the potatoes with foil and cook on a hot grill until the cheese melts and your heart does, too.

Then eat. Eat your heart out, darlin'. You deserve it.

Stuff it!


More serving ideas:

1. Yo! Yogurt! For extra creaminess, place a spoonful of Yoplait Greek yogurt into the bottom of your potato, top with salt and peppa, then stuff your cheese on top. It just adds that extra bit of oozy goodness. OR use the yogurt in place of your usual sour cream topping!

2. Add meat. Stuff a few strips of thin-sliced deli roast beef into each tater to turn 'em into hearty meals. Mmmm.

3. Baked Potato Bar! Set out a bunch of toppings so dinner guests can add their own: bacon bits, cooked chicken chunks, fresh peas and broccoli florets, cooked corn kernels ... anything you can think of!
