Healthiest Classic "Perfect" Pasta Salad

Has been called "perfect" on many occasions in my home! No fatty cream dressings or salty ham cubes, only fresh veggies and refreshing classic oil & vinegar, this salad is as light as it is delicious!

    Ingredients

    • 1 bag tri-color rotelli
    • 1  large red bell pepper
    • 1  large red onion
    • 1/2 can sliced black olives
    • 1 small jar sun dried tomatos
    • 2 handfuls small broccoli florets
    • olive oil enough to coat salad
    • balsamic vinegar to taste
    • 1 handful chopped fresh cilantro
    • 1/2  lime or lemon

    Directions

    1. 1add a little salt and olive oil to boiling water, cook pasta according to directions on package
    2. 2chop veggies while pasta is cooking
    3. 3drain pasta and run it under cool water / let it cool
    4. 4mix in bell pepper, red onion, olives, sun dried tomato slices, broccoli, and chopped cilantro
    5. 5add oil and vinegar last, make sure pasta is well coated with olive oil and add as much balsamic vinegar as you like
    6. 6finish with a spritz of fresh lime or lemon juice and garnish with a couple lime/lemon slices and some cilantro
