Healthiest Classic "Perfect" Pasta Salad

Has been called "perfect" on many occasions in my home! No fatty cream dressings or salty ham cubes, only fresh veggies and refreshing classic oil & vinegar, this salad is as light as it is delicious! 8 bowls

Ingredients

1
bag tri-color rotelli
1
large red bell pepper
1
large red onion
1/2
can sliced black olives
1
small jar sun dried tomatos
2
handfuls small broccoli florets
enough
olive oil to coat salad
to
balsamic vinegar taste

handful chopped fresh cilantro
1/2
lime or lemon

Directions

  • 1 add a little salt and olive oil to boiling water, cook pasta according to directions on package
  • 2 chop veggies while pasta is cooking
  • 3 drain pasta and run it under cool water / let it cool
  • 4 mix in bell pepper, red onion, olives, sun dried tomato slices, broccoli, and chopped cilantro
  • 5 add oil and vinegar last, make sure pasta is well coated with olive oil and add as much balsamic vinegar as you like
  • 6 finish with a spritz of fresh lime or lemon juice and garnish with a couple lime/lemon slices and some cilantro
