Healthy, easy recipe. Great for a healthy after school snack, and packable for school lunches. High fiber recipe. Lots of different grains, and you can add dried fruit, nuts for sweetness and crunch.

    Ingredients

    • 2-1/2 cups Rice Krispies cereal
    • 2 cups uncooked quick-cooking oatmeal
    • 2 tablespoons flaxseed oil
    • 1/2 cup finely chopped dried cherries (or dried cranberries)
    • 1 cup finely chopped roasted almonds (or roasted peanuts)
    • 1/2 cup plus 1 tablespoon honey
    • 4 tablespoons dark brown sugar
    • 2/3 cup almond butter (or peanut butter)
    • 2 teaspoons vanilla
    • 1/2 cup dark chocolate chips
    • 1/4 cup shredded coconut
    • 1/4 cup sunflower seeds

    Directions

    1. 1Butter a 9 x 13 baking pan and set aside.
    2. 2In a large bowl, combine the Rice Krispies, quick cooking oats, dried fruit and dried nuts. Stir to blend.
    3. 3In a small saucepan over medium-high heat, bring the honey and brown sugar to a boil, stirring constantly until the sugar dissolves completely. Remove pan from heat, let cool slightly, then stir in the almond butter/peanut butter and mix in flaxseed oil and vanilla until well blended.
    4. 4Pour the honey-butter over the dry mixture, stirring as you add, until coated. The mixture will be sticky and very stiff, so you'll need to work fairly quickly.
    5. 5Press granola bar mixture into the prepared 9 x 13 pan, and press into the pan with the back of a buttered spoon or a sheet of waxed paper. Place the pan on a rack and cool completely.
    6. 6Cut mixture into 24 bars, wrap each bar tightly in waxed paper or plastic wrap, then store in the refrigerator.
    7. 7I like the cherry-almond combination in this granola bar recipe, but you can easily vary the types of dried fruit and nuts depending on what you like. You can also substitute maple syrup or light molasses in place of the honey, or cashew butter in place of the almond butter.

    i just made these and they dont look at all like your picture. there really didn't seem to be enough "honey butter".
