    Ingredients

    • 2 1/2  lb stew meat (cubed)
    • 2 tablespoons Wondra flour
    • 2 tablespoons oil
    • 1 1/2 tablespoons chili powder
    • 2 teaspoons oregano
    • 2 teaspoons cumin
    • 2  bay leaves
    • 1 Tablespoons salt
    • 1 1/2 cup beef broth
    • 1  (28oz) can diced tomatoes (with juice)
    • 1 large onion (chopped)
    • 1  green pepper (chopped)
    • 3 cloves garlic
    • 3 tablespoons cornmeal
    • 1  can chopped green chilies (undrained)
    • 1  16 oz. can black beans, rinsed & drained

    Directions

    1. 1Dust beef cubes lightly with flour; brown in oil. Add remaining ingredients except cornmeal, chilies and black beans. Simmer 3 hours or until beef is tender.
    2. 2Add cornmeal; Cook & stir for about 1 minute to thicken. Add green chilies and black beans; heat through.
    3. 3Serve with shredded jack cheese, sour cream, cilantro and tortilla chips.
    4. 4*For a little “heat” add ¼ - ½ t. crushed red pepper
