Ingredients

  • 2 1/2 lb stew meat (cubed)
  • 2 tablespoons Gold Medal™ Wondra™ flour
  • 2 tablespoons oil
  • 1 1/2 tablespoons chili powder
  • 2 teaspoons oregano
  • 2 teaspoons cumin
  • 2 bay leaves
  • 1 tablespoon salt
  • 1 1/2 cup beef broth
  • 1 can (28oz) diced tomatoes (with juice)
  • 1 large onion (chopped)
  • 1 green pepper (chopped)
  • 3 cloves garlic
  • 3 tablespoons cornmeal
  • 1 can chopped green chilies (undrained)
  • 1 can (16 oz.) black beans, rinsed & drained

Steps

    Dust beef cubes lightly with flour; brown in oil. Add remaining ingredients except cornmeal, chilies and black beans. Simmer 3 hours or until beef is tender.

    Add cornmeal; Cook and stir for about 1 minute to thicken. Add green chilies and black beans; heat through.

    Serve with shredded jack cheese, sour cream, cilantro and tortilla chips.
  • 4
    For a little heat, add 1/4 to a 1/2 teaspoon of crushed red pepper.
